Co Chau: Modern Vietnamese food in New Westminster
Co Chau is a Vietnamese restaurant located in New Westminster. We saw it pop up on our food delivery apps so we decided to give them a try. This review is based on a takeout experience.
Food
We order the following for 2 adults.
Cha gio ($9)
These are pork spring rolls, deep fried with fillings of pork, black mushroom, carrot, vermicelli and served with fish sauce. They have a vegetarian option as well with taro instead of pork.
The order comes with 4 and they are sliced diagonally, which is quite pretty. I am delighted because these are fried with the rice paper wrap and not the thicker wrap like in Chinese spring rolls. I prefer the Northern Vietnamese spring rolls. I was surprised at actually how orange the spring rolls looked because I’ve never seen spring rolls that orange before.
There was just something about these that made it taste a little different and I liked it!
Bun bo hue ($14)
This is a spicy noodle soup with rare beef, brisket, Vietnamese ham, and thick rice vermicelli. Now I usually find bun bo hue too spicy or more red in colour, but this one was actually right up in my alley. I found the broth to be very savoury and it filled me up with fuzzy feelings – definitely something my boyfriend wants to order on a rainy day. He claims this is the best bun bo hue he’s had from a restaurant so far.
Bun thit nuong ($16)
I order a grilled meat and noodle for myself. For protein, I chose chicken but you can choose beef or pork for your protein as well. It comes with a side of spring rolls and 2 pieces of grilled chicken. The grilled chicken is quite juicy and tender!
I had a lot of vermicelli and salad leftover so I kind of wish there was more chicken but the portion size is actually quite normal.

Our order came to $54 after tax and tip. Keep in mind that prices are also slightly higher when ordering via a food delivery app.
We really liked the food from Co Chau and found the delivery/takeout process didn’t alter the quality of the food by too much. Our favourite item from our order was the bun bo hue and I am interested in trying more of their rice and vermicelli plates that feature more grilled or lemon grass meats.
In terms of New Westminster, I think this may be the best Vietnamese spot if you are looking for a modern Vietnamese restaurant.
